GROWING PEOPLE

FROM THE FARMERS

Watching the farm crew pack the CSA boxes this week caused me to consider all the things that have to come together to make it happen. While we are learning about ways to better use tools and implements for planting and harvesting, we know that the most valuable resource that we have on the farm are the people. Turns out, we have a pretty amazing team that show up and do the work that allows us to put fresh veggies on our neighbors’ tables.

While we appreciate the work of every single crew member, we could not be doing this week in and week out without crew leader Bethany Cook. Bethany came on board last summer, and consistently impresses us with her work ethic and tenacity.

Terry Stone joined us this summer after spending the winter helping us curb our predator problem. A self-taught woodsman, his easy demeanor lightens the mood for all of us. To round out the current crew, we have Taye, Rachel, Valerie, Nick, Lekey, Patrick, and Jason.

We are growing along with our crew – the learning never stops.

FROM THE KITCHEN

Learning more about ways to use your veggies? Just a follow-up from last week’s blog about the library’s “Food, Fun, and Farming” project. This past Monday Cheri Stacy, from Madison County Extension office, used the vegetables of this week’s CSA box to prepare sample dishes for the children and families, rounding out the three week project to expose them to locally, grown vegetables. Check out this link to recipes from the “Plate It Up” Kentucky Proud website. The roasted beets with a vinaigrette dressing was especially tasty.

After a couple of late nights of reading, I finished Karen LeBillon’s book French Kids Eat Everything. I have enjoyed reading her blog and recipes on her website. Lots of great ideas for simple ways to prepare food that appeals to all of us, regardless of age. Here’s the link:

I would love to hear from you all about ways that you have found to introduce your children to healthy food. Send me an email at carla@lazyeightstockfarm.com, and we’ll keep the conversation going.
